Married and lovin it

Tonight at 7:45 Simon and I will have been married for 5 weeks and 4 days! Can I just say that, before the wedding, the days, hours and minutes draaaaaged on and now time is flying! I can't believe we've been Mr. and Mrs. for over a month! And what a wonderful month it has been - filled with joy and thankfulness to our Lord who has been with us every step of the way. Every day I love Simon more. His love overwhelms me and I bask in it every time I think of him (which is....all the time ;) )

I LOVE being married!! I've loved setting up our house and making it a home. I'm lovin cookin (it's actually working! :-D). I love hearing my man drive up after work and come through the door.

Life is good. GOD is good!

Going back to "I'm lovin cookin." Below is an equation I'm so glad I tried the other night:

Ground Beef + Cabbage + Onion + Dinner Roll Dough = BEIROCKS!

Just cuz we liked them so much I'm going to post the recipe below:

Filling:
1 lb ground beef
1/2 yellow onion, chopped
1/3 head of cabbage, shredded

Dough:
1 pkg active dry yeast
1 c. lukewarm water
1 egg
1/4 c. sugar
1 tsp salt
1/4 c. melted butter
3 c. flour

Directions:
Prepare dough first so that it can rise while you are assembling the filling.
Dissolve yeast in lukewarm water. Add egg, sugar, salt and butter and stir. Add half of the flour and stir until smooth (ish). Add rest of flour and stir. Place in greased bowl, cover and let rise.

Brown the meat and season (to taste) with lots of salt, pepper and garlic powder. Put cabbage and onion in another pan with some butter and cook (stirring often) until cabbage is limp and onion is translucent. Add cabbage and onion to the meat and toss together in the pan.

On a floured surface, roll out the dough into a big rectangle (a little thinner than a pie crust) and cut into 4 in. squares (approx.) Put filling in each square and pinch to close.

Place beirocks (pinched side down) onto a greased baking sheet.

Bake at 400 degrees for about 15-18 minutes. Brush tops with butter while still warm.

Serve with butter and salt for people to add.

Delicious with a side of salted cucumbers in vinegar.
